  1. Hey, it’s time for Brunswick Stew!

    Ingredients
    ▢ 2-3 AWARD WINNING FAT squirrels
    ▢ 2 cups stock
    ▢ 4 tbsp bacon fat
    ▢ 2-3 onions, sliced very thin
    ▢ 1 garlic clove, finely chopped
    ▢ 1 1/2 tsp salt
    ▢ 1 Tbsp Worcestershire sauce
    ▢ 1 tsp pepper
    ▢ 1 tsp rosemary
    ▢ 1 tsp thyme
    ▢ 1 bay leaf
    ▢ 1/2 cup Madeira
    ▢ 3/4 cup tomatoes, peeled, seeded and chopped
    ▢ 1 cup lima beans, or other broad bean
    ▢ 1 cup corn
    ▢ 1 cup cut okra, optional
    ▢ bread crumbs
    ▢ chopped parsley

    <b?Instructions
    Place whole squirrels in a dutch oven with 2 cups stock.
    Braise the squirrel meat, covered for about 30 minutes until tender. Remove the squirrels and stock to a separate container to cool. Debone the squirrels when they’re cool enough to handle, and add the meat into the stock. Reserve it all for adding back into the dutch oven later.

    Add 4 tablespoons of bacon drippings to the empty dutch oven, and fry the onions until browned.

    Add in chopped garlic and fry for another minute.

    Pour the stock and squirrel meat into the hot dutch oven to deglaze the pan.

    Add in all the remaining ingredients including spices and vegetables. Cover and simmer for about 30 minutes.

    At this point, serve immediately or add a few handfuls of fresh breadcrumbs to help thicken the soup a bit, along with fresh parsley if desired. If adding breadcrumbs, simmer for another 10 minutes before serving.

  2. I have a friend her in FL. that now has two feeders for his Squirrel Children. He feeds them Black Oil Sunflower Seeds which they tear into as their Favorite Sweet even over peanuts. He dumps a large bowl into each feeder then watches as one will climb into the feeder with it’s whole body covering the seeds, daring others to try to gain access to the seeds until it’s belly is full at which point it leaves, letting the others to fight for their turn. He also has Rabbits that get their share as well. When goes to fill the feeders the next day, nothing is left but the outer hulls. He goes through a 50 bag of seeds per month for these Kids which are closer to Spoiled Brats. Anyone who wants to look for these seeds for their Children, he has found Tractor Supply to be the cheapest place to find the seeds.

    My Grand mother would make Squirrel Gravy from the ones we shot during Small Game Season Sept., Oct. and part of Nov. when they were really fat and getting ready for hibernation. We used an extra slice of bread to sop up every last drop.

  4. Just saw what I thought initially was a pygmy rattler, but I’ve only seen them in Florida and I’m not in Florida. Possibly a Copperhead. About 18-24″. Took pics. Where can I upload?

    Good idea, however, email does not apply.
    Will keep the pics in a box in the attic until we can figure it out. Pretty sure it was a young copperhead but the spots are smaller than the one on todays Claudia sets. Nice Colors.
