“Sex” is physiological. Humans and other animals have two sexes, male and female, mutations and birth defects notwithstanding.
“Gender” is grammatical. In languages with pronouns specific to the two physiological sexes, gender refers to the use of those pronouns as applied to things other than animals with sexes. The assignment of a particular gender to any such “other” thing is entirely arbitrary.
Humans have a disturbed subset made up of those who don’t understand this and want their particular sexual deviations and mental illnesses to be free of criticism by normal people.
